During our week on the boat we had a lot of time and a great big oven, so obviously I couldn't resist temptation to bake all kinds of Summer treats. This one was a big hit with the crew on our boat and in-between dives off the boat into the salty sea was a lovely reward.
Here's how to make the crust:
- 2 1/2 cups plain flour
- 1 teaspoon salt
- 175g unsalted butter, chilled, chopped
- 2 egg yolks
- 2 tablespoons chilled water
Process flour, salt and butter until mixture resembles fine breadcrumbs. Add egg yolks and chilled water. Process until dough just comes together. Put the mixture into the fridge for a few hours or overnight.
I used one kilo of fresh figs and to create the "binding" mixture: 2 eggs, a dash of milk and half a cup of brown sugar. Place the figs in the prepared tin lined with your beautiful pastry and then pour over the binding mixture. I decorated the top of the pie with straps of pastry just to look pretty!
