A high-vibration birthday cake

for a special being. 

I believe in the intention of food, and the energy in which it was created. The nature of this cake is not something that you would find in your local cafe, but I believe that with the worlds current shift of consciousness toward conscious living and food/nutrition with soul, we will be seeing more and more of these cakes around. 

I do my cooking to taste, because I listen to my body needs and go with the foods of the season, but if you follow these guidelines, you can give or take a few ingredients that would make your experience more delicious/to your taste. 

For the pie base:

3 cups of almond meal
half a cup of coconut oil
3 tablespoons of stone-ground tahini
3 tablespoons of cinnamon
half a cup of coconut sugar
half a teaspoon of good quality salt (I used pink himalayan salt)

Blend together and make into a dough that you can pat down on a springform cake tin. If the mixture is a bit dry, you can add some olive oil and/or filtered water.

Line the bottom of the tin with baking paper and press the mixture in until you have made a smooth crust. Put into the fridge. 

For the cosmic high-vibrational chocolate mousse:

3 ripe avocados
half a raw beetroot
half a cup of coconut oil
half a cup of very good quality, organic honey (I get mine from Cirali in the south of Turkey from these guys: https://www.facebook.com/herbisi.com.tr + they send via the post)
3 tablespoons of tahini
half a cup of coconut sugar
half a cup of high quality raw cocoa 
half a cup of dates, soaked and pitted
half a teaspoon of cardamon 
a tablespoon of ground turmeric 
raw ginger (as much as you like to taste)
a tablespoon of raw greens powder
a tablespoon of organic matcha powder

now blend it all up until it is totally smooth. Before you pour it over the crust to chill in the fridge all day, try it and check that it is sweet enough or if you want to add more spices. 

Let it chill all day,top with the fruits and cocoa, edible flowers, and just let yourself be creative. 


Serve + enjoy. Serve with coffee.
